The "L'EMILIA IN TAVOLA" box consists of: no. 1 "Fiocco" Zuarina vacuum-packed half (about 1.25 kg), no. 1 slice of Parmigiano Reggiano (about 500g). FIOCCO ZUARINA: is made from the leanest part of the hind leg of the pig. Trimming and processing gives it its typical teardrop shape. With no preservatives, the curing of fiocco is slow, at least 7 months. The flavor is sweet and delicate, the aroma characterized by fragrant notes. TRANCIO DI PARMIGIANO REGGIANO DOP MONTANARI&GRUZZA: Founded by a Reggio Emilia family about seventy years ago, right on the Via Emilia, the still family-run company is engaged in the production of quality butter and cheeses, including organic ones. Parmigiano Reggiano is based on an extremely complex production method: the characteristics of the paste and the raw use of milk, without antifermentatives and preservatives, demand extraordinary wisdom. Wisdom that is passed down in oral teaching from the master cheesemaker to the dairy boy, as from father to son, in the succession of generations.
