Clai "Osolemio" salami has an aromatic and strong taste, an intense aroma and a slightly smoky flavor, with notes of Aglianico red wine, typical of the Campania area.
The name recalls Neapolitan tradition, but the recipe and processing are typical of traditional Italian haute charcuterie. Drying is done in brick cells and curing takes place very slowly, helping to give the salami an aromatic and strong taste, an intense aroma, and a slightly smoky flavor, with notes of Aglianico red wine, typical of the Campania area.
