The name of this salami, "Imola 1962," recalls the place and year of CLAI's founding. The neat and elegant wrapping represents the iconography of the CLAI identity, which has been offering high-quality meat and cured meats on the Italian and international markets since 1962. Although small in size, this salami has a long aging period of at least 8 weeks in dedicated cells, resulting in a mild and delicate salami. The "short" ingredient list enhances the high quality of 100% Italian meat from Filiera CLAI. "Imola 1962" was created thanks to a research process that lasted more than two years coordinated by CRPA of Reggio Emilia (Animal Production Research Center) in collaboration with CIRI (Interdepartmental Center for Agribusiness Industrial Research) of the University of Bologna.
